Silvered Almonds

>> Saturday, July 31, 2010

A fabulously edible finish for your favors. And you won't have to sacrifice style for tradition. Larger Italian almonds, prized for their elegant shape, are dipped in a thinner layer of sugar infused with a bit of edible silver for a lustrous look. So shiny you can see yourself. Less sugar in the coating makes them more delicious and not as hard to the tooth as other sugar-coated almonds. Sold in 14 ounce bags, approximately 100 almonds per bag. The size of each almond is approximately 1 1/4" x 5/8". Present in favor boxes or simply fill champagne glasses or a candy dish. If preparing favors over a month ahead of the wedding, place them in larger airtight bags and keep out of direct light to prevent the silver on the almonds from oxidizing, or tarnishing. Eliza's Tip Wedding favors date back to Victorian times. Sweet wedding favors were created in odd numbers, symbolizing the indivisibility of the newlyweds. Favors with five sweets symbolized health, wealth and happiness and one each for a boy and a girl. Many cultures consider these almonds a must for weddings because they symbolize the joining of the bitter and the sweetness of life itself. Greek weddings call them koufeta and place them on the tray with the crowns and candles during the ceremony.
